Concept

The concept of the Health Food Festival is set out along the following guidelines:

  • An exclusive number of 15 Participating restaurants.
  • An independent professional nutritionist (see below) created guidelines regarding the ambiance of the restaurant, the ingredients, the preparation, composition of the menu and the drinks available.
  • All restaurants chefs prepared a special healthy menu, next to the restaurants ‘normal’ menu, according to the guidelines created by the nutritionist, to gain the ‘Health Food Festival’ restaurant label.
  • All restaurants will be displayed on our two WebPages: www.healthfoodfestival.com and www.festivalzdravehojidlo.cz with all restaurants details and the health menu available.
  • 15.000 discount booklets for the festival will be given to each participant of the Prague Marathon weekend, as a promo item on the Prague Marathon Sport expo at Vystaviste (8-10-05-2008) and during the marathon weekend Sunday at the race day on the Old Town Square.
  • Of course you can also have this taste experience without a coupon by just walking any of the 15 specially marked restaurants and ask for the health food menu.
  • All restaurants will bare a Health Food Festival sticker at their entrance for recognition.
  • We try to inform all athletes and all Prague inhabitants of the advantage of health food and at the same time give inspiration in how to prepare health food to satisfy your taste senses.

Health Food Festival Nutritionist

My name is Luca Speciani, a well know nutritionist from Italy. I was requested to participate in this festival by drawing up guidelines the restaurateurs. Most chefs are of course educated professionals but the festival needed to set some value, hence my participation and independent advice.

In 1982 I finalized my studies in agriculture and food science. Coming from a family of doctors I was of course also very much involved in medical science for which I plan to finalize my degree this year as well.

First of all, I consider myself a runner, which is my passion. At the age of 40 I still run the marathon in a reasonable time (2h30). I have been able to combine my passion with my work as a nutritionist and since 2003 I am a member of the Italian Federation of Athletics (FIDAL). Here I guide and also mentally support many athletes, also through online diaries, to produce their best possible performance through a healthy and balanced diet.

Since 2005 I developed, in cooperation with a famous clinic in Milan, a book called DIETA GIFT. The Dieta Gift is a complete and innovative analysis allowing people order to lose weight without only counting calories and it creates a direct connection between what people eat compared to their performance in life.

I truly hope you will enjoy Prague’s first Health Food Festival and that it will open your eyes in how health food can contribute to feeling more fit and performing better in sports and in ‘normal’ life.
